Snickerdoodles are a timeless classic and have been a favorite of mine forever. There is just something about that cinnamon-sugary goodness that I can't get enough of. The amazing thing to me is that they even taste better the next day!
There are no special techniques, no dough-chilling and no fancy ingredients. These are super easy make at home cookies with great results every time.
Makes approx. 4 dozen
3 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1 cup (2 sticks) unsalted butter, softened
1 1/3 cups + 1/4 cup sugar
2 large eggs
1 tsp. vanilla extract
1 1/2 tsp. ground cinnamon
Preheat the oven to 375*F.
In a bowl, stir together the flour, cream of tartar and baking soda. Set aside.
In another larger bowl, with mixer at medium speed, beat together the butter and 1 1/3 cups sugar until light and fluffy. Beat in eggs and vanilla. Reduce speed to low; beat in flour mixture until well blended.
In a small bowl, combine cinnamon and remaining 1/4 cup sugar.
With hands, shape dough into 1 inch balls. Roll in cinnamon sugar mixture to coat.
Place balls 1 inch apart on a large ungreased cookie sheet. Bake about 12 minutes or until lightly golden and slightly crinkly on top. Cool for 1 minute on cookie sheets and then remove to wire racks to cool completely.
Repeat until all dough is used.
