I truly believe that Pico de Gallo is the reason tomatoes exist.
Well, maybe that and spaghetti sauce.
This used to be one of those things that I would buy in the supermarket deli already prepared or only be able to enjoy while at a Mexican restaurant. I honestly had no idea how unbelievably easy this was to make at home.
Then I tried it. So easy!
And the flavor.....wow!
I will never buy store bought salsa or pico de gallo again.
Pico de Gallo
Makes enough for you and a few friends, unless of course you end up eating it all yourself
6 Roma tomatoes
1 red onion
1 bunch of cilantro
1 1/2 tbls. of salt
1 jalapeno (optional), seed and pith removed
Dice the tomatoes and red onion into small cubes.
Rinse your cilantro then finely mince just the leaves.
If you want to heat things up, mince the jalapeno and add into the mix.
Combine all the ingredients into a bowl.
Squeeze 2 limes; add the juice and the salt to the tomato mixture.
Mix well and refrigerate pico de gallo for a couple hours for best flavor.
Enjoy with chips or on top your favorite taco!
Note: The beauty of this recipe is it can be completely customized to fit your families' tastes. Love onion? Add more! Not a huge fan of cilantro? Use only half the bunch. Love it spicy? Add your favorite pepper in place of the jalapeno.
