I love bacon and it magically seems to make even the most basic recipe feel indulgent and special. Everything's better with bacon, right?
While bacon is awesome, so are summer tomatoes. There's not much better during the hot summer months than biting into a juicy red tomato right off the vine. And what better way to show them off than making them a star in this salad.
Think of it like an inside out BLT sandwich and because it's a salad it's better for you. Well, at least we can pretend it is.
BLT Caesar Salad
8 cups torn lettuce leaves (Romaine and Green Leaf are both great choices)
1/4 - 1/2 cup Caesar salad dressing, store-bought or homemade
1 fresh tomato, diced
8 slices bacon, cooked and torn into 1/2-inch pieces
A handful of croutons, store-bought or homemade (Butter & Garlic Crouton recipe)
In a large bowl, toss together the lettuce and dressing (amount as desired) until well combined.
Add the tomato, bacon and croutons. Toss gently. Serve immediately.
