I love cold salads for lunch in the summer. So easy and no heating up the house with cooking. My favorite way to eat this is over leftover quinoa and veggies. Toss them together real quick and you have an instant Asian inspired lunch to go.
Garlic Ginger Sesame Dressing
Makes approx. 3/4 cup dressing
2 tbls. rice vinegar
1/4 cup soy sauce
1 tbls. brown sugar
1 tsp, honey
1 tbls. grated fresh ginger
1 clove garlic, minced
2 tsp. sesame oil
1/4 cup olive oil
3 green onions, white parts only, finely chopped
2 tbls. sesame seeds (toasted or untoasted)
Whisk together all ingredients. Serve immediately or refrigerate for later use.
