Are you looking for an easy Back to School breakfast? This could be your answer. Amazing all on it's own, it's also great as a cereal with milk, a topping for yogurt or even a crunchy topping to oatmeal.
Cinnamon Maple Granola
4 cups old-fashioned oats
1 1/2 cups chopped walnuts
1 cup flaked coconut
1 cup pure maple syrup
1/4 cup corn syrup
1 tbls. ground cinnamon
1 tbls. vanilla extract
In a large greased roasting pan, combine the oats, walnuts, and coconut. In a small bowl, combine the remaining ingredients and stir to mix well.
Pour syrup mixture over oat mixture; toss to coat.
Bake at 275*F for 40-50 minutes or until golden brown, stirring every 10 minutes.
Spread on 1 or 2 baking sheets to cool. Store in an airtight container.
*If desired, dried berries can be added to the granola immediately after removing from oven.
