Magical mommy moments are harder to come by as the kids get older and some what wiser. When they're little you can play peek-a-boo, kiss their boo-boos, and make them macaroni and cheese and to them, all of these things seem like this incredible magic that only their mommy possesses. But like everything else from their childhood, these moments tend to slip away as the kids realize that it's Tylenol and boiling water, not magic that makes these things possible.
Every once in awhile though we can find one of those magical moments again by making them something at home that they've only ever seen in a restaurant. This happened here the other night. I was making dinner and on a whim I decided to make these little mozzarella sticks. I've made them before, but it's been a few years and they didn't remember them. It was incredibly easy to sneak around the kitchen tossing a little flour and bread crumbs here and there. They never even looked my way.
When we sat down to dinner, the look of shock and amazement on their faces was so worth the little extra effort it took to make these. They could hardly believe that these were homemade. Why they doubt their mother I will never know considering everything here is homemade, but hey, I got to experience one of those elusive magical mommy moments so all is right with the world today.
Mozzarella Stick Nuggets
8 string cheese sticks, room temperature
1/2 cup flour
1 egg, lightly beaten
1/2 cup Italian bread crumbs
Oil for frying
Marinara or pizza sauce for dipping
Cut cheese stick into thirds.
Add the cheese pieces to the flour and toss to coat.
Dip the flour covered pieces in the egg and then roll in the breadcrumbs to cover them.
Arrange the breadcrumb covered pieces in a single layer on a baking sheet or large plate. Let sit for 15-30 minutes.
Pour oil into a skillet suitable for frying (cast iron works awesome!) so the oil is approx 1 inch deep. Please make sure your skillet is deep enough that the oil will not overflow while frying. This could be a fire hazard!
Heat oil over med to med-high heat until it reaches 350*F. A candy thermometer works great for this.
When oil is hot, carefully drop cheese pieces into the oil a few at a time and fry until golden brown, about 15 seconds. Yes, that fast!
Remove from oil with a slotted spoon and drain on paper towels.
Serve with dipping sauce and enjoy!
