Happy Labor Day weekend! I hope you are all enjoying this last taste of summer before we really dig into fall.
For once the entire family is home for the weekend with no one having to work or places to be. It's been a family weekend for the last 3 days and I'm loving it! It's so rarely happens anymore with the oldest a senior, another starting high school and the last firmly in middle school.
We've managed to squeeze in 2 different trips to the movies, a stop at the beach to cool off, potluck dinner at church and enough time left to knit to make this momma happy. The best part is we were able to all of these for free!
For potluck we took an old family favorite. This yummy pea salad is slightly updated version of the same one that's been floating around the family for decades and in my opinion, better, but shhh.....don't tell.
Creamy Pea Salad
2 (16 oz.) bags frozen peas, thawed
1 (8 oz.) block cheddar cheese, cubed
1 med. red onion, chopped
1 cup mayo
Salt & Pepper to taste
6 strips bacon, cooked and crumbled
In a large bowl, mix together the peas, cheese and onion. Add mayo and salt & pepper. Stir to coat evenly. Add bacon.
Refrigerate until serving.
