I've been thinking ahead to our Thanksgiving menu and before I even thought about the turkey, I was dreaming up a brussel sprout side dish. I love brussel sprouts and right now they are in season. What better way to highlight them than to roast them in some olive oil and toss them with deliciously nutty pine nuts. Yum!
Roasted Brussel Sprouts with Pine Nuts
2 pounds brussel sprouts, ends trimmed
Extra virgin olive oil
1/2 teaspoon salt
1/3 cup pine nuts
6 slices bacon, cut into strips
Preheat oven to 400*F.
Cut the brussel sprouts in half lengthwise. In a bowl, toss the sprouts with just enough oil to lightly coat them, sprinkle with salt. Place sprouts on a baking sheet and bake in oven for 20 minutes.
Meanwhile, in a small frying pan, cook bacon until nearly done. (It will finish cooking in the oven.)
When the timer goes off for the sprouts, pull them out and sprinkle bacon and pine nuts on top. Bake for an additional 5-7 minutes or until sprouts are tender and pine nuts are lightly toasted.
